Oh, I got it—the pay is considered high for the food service industry, and there is overtime pay.

1. Because they keep the restaurant running at full capacity during both peak and off-peak hours and focus on table turnover, there is hardly any opportunity to drink water or use the restroom apart from the one-hour break. It's absolutely exhausting.

2. Following from point 1, almost everyone working there is under 25, and part-time workers far outnumber full-time employees... I guess people over 25 couldn't handle it either, right?

3. There are no chefs, yet everyone still happily lines up. Maybe Taiwanese people are willing to queue when they see something from Japan.
