The work is neither tiring nor difficult, but it is a job that wears down your will:

1 - Newcomers start by sweeping and mopping. One person sweeps and mops the first and second floors (you keep doing it until a new person arrives and takes over, but because the turnover is so high, a new person soon reports for duty). Senior restaurant employees will keep pointing out how you should sweep and mop. Everyone has a different way of instructing you, telling you where you did a poor job and where you need to improve. The advanced version of sweeping and mopping is setting the tableware on the tables on the first and second floors (everything must be collected after lunch and all set out again when the evening shift starts; everything must also be collected after the evening shift and set out again when you come to work the next day). Senior employees will tell you: “There are many people now, but later there will be fewer people, and all of this will be your responsibility.” No matter how hard you try to set the tables, senior employees will tell you that you did it badly!!! The advanced version of setting the tables is cleaning the second-floor restroom............ Here, you will receive nothing but negative comments. Many times, senior employees really do “keep an eye on” new employees while they work. Before you have even finished, they come over to instruct you on how to sweep and mop and how to do this or that........ Going to work feels like being in prison.

2- The small restaurant on the first and second floors is packed with surveillance cameras. Besides making it convenient to see what is happening on-site, when the boss is not there, senior employees keep telling rookies that the boss monitors everyone around the clock even when he is at home...... Everyone has to work hard.

3- Senior employees whisper things to the boss. The way senior employees speak to other senior employees is very different from how they speak to new rookie colleagues!! Senior employees chat happily, but rookies are not allowed to.

4- This refined Japanese restaurant does not have many customers each day, but newcomers must follow the senior employees’ instructions to keep repeatedly, repeatedly, repeatedly, repeatedly........... refilling customers’ tea and changing their plates (even if a customer has only taken one or two sips of tea or there is only one edamame pod on the plate, you still have to keep refilling and changing them—the so-called attentive service). You have to stand behind the customers and stare at the items on their tables to see what service they need.

5- There are not many customers each day, so you just keep doing cleaning work over and over and over and over........

6- The tableware is very expensive, and you have to pay for anything you break yourself. A reminder for anyone working here: be extremely careful and extremely gentle (these are things the old hands will not tell you).

7- Older employees love to nag.

High turnover is normal in the food-service industry, but it is a little too high here.

I cannot stay at a company that is constantly struggling with how to retain its employees!!!
